Application of Food-Grade Silicon Dioxide in Beer: Difference in Clarification Efficiency Between Xerogel and Wet Gel

In beer production, food-grade silicon dioxide serves as an efficient clarifying agent that can effectively remove protein-polyphenol complexes, thereby significantly improving the light transmittance of beer. The efficiency difference between xerogel and wet gel silica products directly impacts the brewing process efficiency and production costs, which is a key consideration for breweries of all sizes.
Wet gel silica has a high water content of 60% to 80% and a spongy porous structure, featuring strong instantaneous adsorption capacity for colloidal impurities in beer. It is particularly suitable for batch filtration in small and medium-sized breweries. With the application of wet gel silica, the light transmittance of beer can be increased from 75% to over 95%. However, it requires on-site preparation for immediate use, with a short storage period of only 3 to 5 days, which limits its application in large-scale continuous production.
Xerogel silica is formed through dehydration and drying processes, with a specific surface area of more than 600 m²/g, a more stable pore structure, and an adsorption capacity 2 to 3 times that of wet gel silica. Its core advantages lie in convenient storage and transportation, without strict requirements on storage conditions. Moreover, through gradient pore size design, it can be flexibly adapted to beers with different malt concentrations: for high-gravity brewed beer, a customized model with a pore size of 10-30 nm is adopted, which can simultaneously adsorb macromolecular proteins and polyphenols; for crisp-style beer, a small pore size model is used to accurately remove turbid substances, and the addition amount can be reduced to 0.05% to 0.1%, effectively reducing production costs.
